Why we brew by hand

A good bag of coffee has more flavour in it than most machines ever get out. Automatic brewers run too cool, pour too fast and soak every part of the coffee bed the same way, which is how a bright, floral Ethiopian ends up tasting like any other cup.

Brewing by hand puts the three things that matter back in your control: how fine the coffee is ground, how hot the water is, and how slowly it meets the grounds. Get those right and the coffee tastes the way the farmer and the roaster meant it to. It takes three minutes, and after the first week you won't need to think about it.

Everything on this page is what we use in our cafés and teach with in our free brew classes. If you are starting from nothing, the Pour-Over Starter Kit and the Gooseneck Kettle are all you need; the grinder is the single biggest upgrade after that.

The details

Pour-Over Starter Kit

Your first pour-over, sorted

The kit we hand to anyone who asks where to start. The ceramic cone holds heat through the whole brew, its spiral ribs keep the filter off the wall so water drains evenly, and the single large outlet puts the speed of the brew in your hands rather than the dripper's. It sits on a 600ml borosilicate server marked at 200ml intervals, so you can brew one cup or three without a scale on the counter. Pair it with a light roast such as our Ethiopian Yirgacheffe and follow the pour-over guide on The Roast Journal.

Gooseneck Kettle

A slow, steady pour

Pour-over lives or dies by the pour. A standard kettle glugs; this one's 8mm gooseneck spout lets out a thin, even stream you can steer in slow circles over the coffee bed, which is what keeps the extraction even. The dial thermometer in the lid reads 40-100°C so you can stop at 94°C without guessing, and the counterweighted handle keeps a full kettle balanced in the hand. Works on gas, electric and induction hobs.

Conical Burr Grinder

The biggest upgrade you can make

Pre-ground coffee loses most of its aroma within half an hour of grinding, and a blade grinder smashes beans into dust and boulders that brew unevenly. Conical burrs cut every particle to the same size, so the whole dose extracts at the same rate. Forty stepped settings cover everything from espresso to French press and cold brew; the low-speed motor keeps the grounds cool, and the anti-static bin means less mess on the counter.

Glass Carafe

Serve it, or cold-brew in it

Hand-blown borosilicate glass that goes from boiling water to the fridge without complaint. The walnut collar, tied with a leather cord, keeps your hand off the hot glass as you pour. Brew straight into it with any cone dripper, or fill it with coarse grounds and cold water, leave it overnight, and strain in the morning for a smooth, low-acid cold brew.

Which do I need?

Side by side. Most people start with the kit and the kettle and add the grinder when they notice the difference fresh grounds make.

Looking after your kit

Rinse, don't scrub

Coffee oils turn rancid and bitter. Rinse the dripper, server and carafe with hot water straight after brewing, and give them a proper wash with unscented soap once a week.

Descale the kettle

Hard water leaves limescale that dulls the pour and the taste. Once a month, boil a 1:1 mix of water and white vinegar, leave it for an hour, and rinse twice.

Brush the burrs

Every couple of weeks, empty the hopper, lift out the upper burr and brush away the fines. Never use water on the burrs; a grinder that is kept dry lasts for years.
